Beekeeping has been present in our family since 1972, when Anton Dolinšek set up the first apiary right here in Novo mesto. Today, his son Simon Dolinšek runs the beekeeping operation with approximately 330 bee colonies in 5 transport units. Every jar of honey you buy from us is the result of our own work – from caring for the bees, moving hives to the best pasture locations in Slovenia, to extraction and bottling.

We verify honey quality through laboratory testing in Berlin. We participate in honey evaluations in Semič and are in the process of inclusion in the SMGO scheme (Slovenian Honey with Protected Geographical Indication). This is not just a promise – this is provable quality.

Beekeeping Dolinšek today manages approximately 330 bee colonies, distributed across 5 transport units. This enables us to move bees to the best pasture locations throughout Slovenia – from early spring to late autumn.
Our home apiary stands in Novo mesto, where the bees overwinter and where they begin the new season. From here we transport them to pasture at Bizeljsko (acacia), to Ribnica (linden), to Bela krajina (chestnut), to Kočevski Rog and the Javorniki forests (fir and forest honey), to Krim near Ljubljana and to the hills around Ribnica.
This very diversity of locations and environments gives each honey variety unique characteristics. Acacia honey from Bizeljsko has a different profile than linden honey from Ribnica, forest honey from Rog is completely different from flower honey from Dolenjska meadows. When you buy honey from us, you buy a piece of Slovenian nature – with known location, known beekeeper and provable quality.
The beekeeping is led by Simon Dolinšek, who continues the work of his father Anton. Simon is an active member of the local beekeeping community and regularly participates in honey evaluations in the region.
