Origin and authenticity

We harvest our linden honey in Ribnica and Ribnica Valley – an area with rich tradition and numerous linden trees. Broad-leaved linden blooms in June, small-leaved linden two weeks later, together the pasture lasts 3-4 weeks. Linden is a symbol of Slovenian identity – there's hardly a village without a mighty linden in the village square. These village squares were for centuries the center of life, people gathered under lindens and made deals. When June brings the scent of lindens, we know it's time for the healthiest pasture of the year.

Appearance, aroma and taste

Linden honey is light yellow to amber color with a characteristic greenish tint, which is its most recognizable feature. The scent is pronounced, strong and specific – fresh scent of linden blossom with strong menthol note and citrus undertone. The taste is medium to strongly sweet with fresh menthol taste that acts refreshingly. A slight bitterness is present and a characteristic feeling that it "puckers the tongue". The taste remains in the mouth long after consumption.

Nutritional value

Linden honey contains vitamins C and B-complex (B1, B2, B3, B5, B6), minerals (potassium, calcium, magnesium, manganese, phosphorus, zinc), strong natural enzymes with antibiotic action and essential oils from linden blossom. It's rich in flavonoids (hesperetin, hesperidin, rutin) and glycoside tiliacin – a characteristic substance of linden.

Healing properties

Linden honey has the strongest antibacterial and antiseptic action among all honeys. It acts as a diaphoretic – promotes sweating, which is excellent for fever. It helps with colds, flu, cough, bronchitis and respiratory diseases. It has a calming effect on the nervous system, helps with stress and insomnia. It supports detoxification of liver and gallbladder.
WARNING: Not recommended for heart patients as it promotes sweating and can burden a weak heart.

Kitchen use

Excellent in herbal teas (chamomile, lemon balm), especially in combination with lemon for colds. Traditionally used in walnut potica and honey pastries. Pairs with stronger, aged cheeses. Add to warm (not hot!) tea or warm milk before bedtime.

Crystallization

Linden honey crystallizes relatively quickly – nectar honey in the first 4 months, honeydew somewhat slower. Crystallized it has a creamy, smooth texture. Linden honey that doesn't crystallize by the end of the year is suspicious – it may be overheated or adulterated. Crystallization is a sign of quality! To liquefy, use a water bath up to 37°C.

Available in 900g packaging. Price includes VAT. Store at room temperature (18-22°C) in a dark place, never in the refrigerator.
IMPORTANT: Never add honey to boiling water – wait for it to cool to max. 40°C.
