Origin and authenticity
We harvest forest honey in Kočevski Rog – Slovenia's largest continuous forest with 21,000 hectares and 91% forest coverage – and in Javorniki. It's a natural mixture of honeydew from various trees: spruce (20%), fir (15%), beech (55%), maple, oak and linden, with addition of nectar from forest undergrowth. Bees in these forests collect from the ENTIRE FOREST – not just one tree. That's why each batch is somewhat different, depending on which trees gave most honeydew that year.
Appearance, aroma and taste
Forest honey has a wide color spectrum – from light brown to dark brown-green, depending on predominant honeydew. It may have green shades (fir), reddish (maple) or resinous (spruce). Each batch is unique! The scent is intense, rich and complex: resin, spruce tip syrup, wax, wood, caramel. The taste is very full and rich – sweet, pleasant, with slight bitterness and resinous undertone. "Very full taste that is sweet and pleasant" – as connoisseurs describe.
Nutritional value
Forest honey contains many minerals – more than floral honey: iron, calcium, potassium, magnesium, phosphorus. It's rich in nitrogen compounds (proteins, amino acids), enzymes, antioxidants, polyphenols and flavonoids. Resinous substances from conifers add healing properties.
Healing properties
Forest honey is excellent for anemia – recommended with fresh fruit juice for better iron absorption. It accelerates regeneration after illness or surgery. Especially recommended for pregnant and nursing mothers due to minerals. Helps with throat inflammation – very beneficial! Strengthens immune system, heart and vessels and raises hemoglobin.
Kitchen use
Best pure on a spoon or with black bread. Excellent in cottage cheese dishes and meat sauces (game, roast meat). Traditional use: fresh fruit juice + forest honey – for pregnant women, nursing mothers and anemia! Pairs with nuts, strong cheeses and natural yogurt.
Crystallization
Crystallizes moderately fast – usually in 3-6 months. Crystals can be fine or coarse, depending on composition. Crystallized it becomes lighter. Crystallization is a sign of naturalness – if forest honey doesn't crystallize, it's suspicious. To liquefy, use water bath up to max. 37°C.

Available in 900g packaging. Price includes VAT. Store in dark place at room temperature (18-22°C). Forest honey is often the LAST PASTURE of the season – the conclusion of the beekeeping year at the end of August.
