Detailed description
Origin and authenticity
We harvest flower honey on blooming meadows of Dolenjska and Bela krajina – traditional meadows without intensive agricultural production. Main sources are dandelion, clover, violets, meadow flowers, herbs and fruit trees (apples, pears, cherries). This is the FIRST HONEY we extract in the year – around May 1st! After a long winter, this is a celebration for the beekeeper – the beginning of the season, a promise of summer. Our meadows are not monocultures – they're diverse, colorful, full of life, which means richer honey.
Appearance, aroma and taste
Flower honey has a characteristic golden yellow color – "attractive and beautiful to the eye", as customers say. It's lighter than forest honeys but can be darker than acacia. It contains considerable pollen, so it's usually slightly cloudy. The scent is delicate and floral – smells of meadow flowers, fruit and compote. The taste is pleasant and sweet – can be VERY sweet – completely WITHOUT bitter aftertaste. "Mild but full taste" – simple yet diverse.
Nutritional value
Flower honey contains enzymes (digestive, antibacterial), vitamins (B-complex, traces of vitamin C), minerals, antioxidants (flavonoids, polyphenols) and CONSIDERABLE bee pollen, which means more proteins, amino acids and higher nutritional value.
Healing properties
Flower honey is known as a natural remedy against allergies – especially hay fever! Local honey from your area builds resistance to local allergens. Helps with colds, coughs and sore throats. Acts antibacterially and anti-inflammatorily. More easily digestible than sugar with low glycemic value. Natural source of quick energy for athletes and children.
Kitchen use
UNIVERSAL honey – you can use it ANYWHERE! Traditionally on bread with butter for breakfast. Excellent in tea, coffee, yogurt, cereals. Suitable for baking (cakes, cookies), pancakes, smoothies. Doesn't dominate – mild and friendly taste. Especially popular with CHILDREN due to sweetness without bitterness.
Crystallization
Flower honey crystallizes QUICKLY – usually in 1-3 months. "The only true honey is one that hardens!" – honey used to be called STRD (hardener). Crystallization is a sign of QUALITY and naturalness. "Bloom" on top (white spots) = sign of low water content = quality! To liquefy, water bath up to 37-40°C.
Practical information
Available in 900g packaging. Price includes VAT. Store at room temperature in dark place, NEVER in refrigerator (speeds up crystallization).
