Transparent golden color with subtle scent of fresh flowers and delicate vanilla sweetness without bitter aftertaste. Origin and authenticity

We harvest our acacia honey at two exceptional Slovenian locations – in Bizeljsko, a well-known wine-growing region along the Sava river, and in Prekmurje, which is known for its extensive acacia plantations. Acacia blooms only briefly, usually from mid to late May, and the pasture lasts only 10-14 days. This short flowering period ensures exceptional purity of honey – it's monofloral honey without admixture of other flowers. For each jar of acacia honey we travel more than 100 km from our home in Novo mesto to pasture locations, where our bee colonies spend 2-3 weeks while acacias bloom.

Appearance, aroma and taste

Acacia honey is the lightest of all Slovenian varietal honeys. Its color ranges from almost colorless, water-clear to gently straw-yellow. In the jar it appears as a transparent syrup with characteristic golden shine. The scent is extremely delicate and subtle – it smells of fresh white acacia flowers with discrete floral notes reminiscent of roses. The taste is dominated by pure, smooth sweetness with a note of vanilla, completely without bitter aftertaste, which makes it popular even with the youngest.

Nutritional value

Acacia honey contains numerous enzymes (diastase, invertase), B-complex vitamins (B1, B2, B3, B6, B9), minerals (potassium, calcium, magnesium) and traces of pollen from acacia flowers. The specialty is high fructose content (over 40%) and low glucose content, which gives it a lower glycemic index than other honeys.

Healing properties

Acacia honey helps with sleep problems – it's recommended to consume it in the evening, about an hour before bedtime. It soothes irritated stomach, helps with heartburn and digestive disorders. Due to low glycemic index, it's more suitable for diabetics in moderate amounts. It has a beneficial effect on the nervous system and reduces stress and tension. It's less allergenic than other honeys, making it more suitable for people with allergies.

Kitchen use

Ideal as a sweetener for tea, coffee or drinks – it doesn't change their taste, only adds delicate sweetness. Perfect as a spread for breakfast, especially popular with children. Excellent with fresh fruit (strawberries, blueberries) and soft cheeses (ricotta, camembert). Suitable for fruit cakes, cookies and smoothies.

Crystallization

Acacia honey crystallizes exceptionally slowly – it can remain liquid even for several years. This is a consequence of high fructose content. When it finally crystallizes, it becomes finely creamy with a light cream color. Crystallization is a sign of quality, not spoilage! To liquefy, place the jar in lukewarm water up to 37°C – never heat above this temperature as you'll destroy enzymes and healing substances.

Our bees collect acacia nectar in Bizeljsko and Prekmurje, where there are extensive acacia plantations. The nectar flow lasts only 10–14 days in May – we then transport the bees there and back.

We ensure varietal purity through migratory beekeeping – the bees are only in acacia plantations during the acacia nectar flow. Samples are tested in a Berlin laboratory for pollen DNA to confirm varietal purity.
