Origin and authenticity
Fir honey is the RAREST Slovenian honey. We harvest it in Kočevski Rog – the largest intact forest complex in Slovenia with 91% forest coverage – and in Javorniki. Fir gives honey RARELY – on average every 5-6 years! Honeydew forms only under specific conditions (temperature, humidity, aphid population), which makes this honey exceptionally precious. In Kočevski Rog stands the "Fat Fir" – Queen of Rog: 51.5m tall, 500 years old, with a circumference of 5m. This is a symbol of fir's strength and endurance, from which our fir honey comes.
Appearance, aroma and taste
Fir honey is dark brown to almost black color with characteristic GREEN reflection – this is its most recognizable feature. When light shines through it, it glows emerald green. It's the darkest of all Slovenian honeys. The scent is intense and unique: resinous, balsamic note, caramel, spruce tip syrup, forest scent. The taste is pleasant – sweet with slight bitterness, resinous undertone and long-lasting.
Nutritional value
Fir honey contains the MOST mineral substances among all Slovenian honeys: iron, potassium, calcium, magnesium, phosphorus, manganese, zinc, copper, selenium. It's unique in its content of TERPENES – substances that soften mucus in respiratory diseases and have anti-inflammatory action. It's rich in phenolic compounds and flavonoids.
Healing properties
Fir honey is HONEY FOR HEALTH. Excellent for cough and bronchitis – terpenes soften mucus and relieve irritation. Helps with anemia due to iron richness. Ideal for regeneration after illness, surgery or fatigue. Recommended for pregnant and nursing mothers due to minerals. Strengthens immune system and accelerates bone and blood renewal.
Kitchen use
Best enjoyed pure on a spoon – this is the most intense way! Excellent with black bread, nuts, dried fruit (figs, dates). Pairs with strong cheeses and game. In warm milk before bedtime for strengthening. Due to rarity, use it thoughtfully – for health, not for everyday sweetening.
Crystallization
Fir honey DOES NOT CRYSTALLIZE or crystallizes extremely slowly – it can remain liquid for YEARS! This is one of its specialties, characteristic of honeydew honeys. If it remains liquid for years – this is NORMAL and a sign of quality! It doesn't need de-crystallization.
